Interesting facts

Beans belong to the large family of legumes (Fabaceae), which also includes other well-known crops such as broad beans, soy beans, peas, peanuts and clover. Flowering plants such as broom, acacia and golden rain also belong to this large group. Beans came to Europe from Central and South America in the 16th century.

 

The wild variety of beans are climbing plants, i.e. they wind anticlockwise around nearby objects, such as trees. Bush beans no longer have this characteristic. They forms a bush and therefore do not require any additional climbing aids like runner beans. Beans put roots up to 1.5 metres deep in the soil and thus make an important contribution to the deep loosening of the soil. As beans are able to bind atmospheric nitrogen via symbiontic bacteria, they do not necessarily need to be further fertilised.

 

The pods of the bush bean shine in an intense dark green colour, have a round shape and smooth skin. They are eaten whole.

We grow our organic green beans at our organic site in Winsen/Luhe (Lower Saxony). They love sandy, deep and loamy soils, which should be kept well moist, because the bush beans do not tolerate very dry conditions.

As they are annual and frost-sensitive plants, beans should not be planted or sown outdoors until mid-May.

The seeds are inserted 2–3 cm deep in the soil using a sowing machine. Small annual bushes grow from the seed and pods form on the bushes. Harvesting the beans is carried out purely by hand. 

Beans must not be eaten raw as they contain phasin, a poisonous protein compound. This protein is only destroyed by boiling in hot water for at least 10–15 minutes. Before cooking, you should wash the organic green beans briefly and trim off the ends.

 

Beans are an excellent accompaniment to meat and fish. They can also be used to make a delicious bean salad. They also taste great rolled in bacon on the barbecue. Regardless of which method of preparation you choose, the delicious green beans must be boiled in water for about 10 minutes beforehand.    

 

Fresh organic bush beans will have a strong green colour and smooth, plump skin.

 

Bush bean should be eaten very soon after purchase. If you want to keep the beans for longer, you can blanch them briefly, place them in cold water, drain them and then freeze them.
