We grow our organic rocket at our organic site in Rosenweide (Lower Saxony). It grows under protected cultivation, i.e. in greenhouses or in polytunnels. Organic rocket loves well-drained, sandy soil.

Our organic rocket is not sown from seed, but planted in the soil as seedlings. This allows it to develop thicker-fleshed leaves, as the plants are not as tightly planted as when they are grown from seed.

Harvesting is exclusively by hand. The cut salad leaves are carefully placed in sales trays. While this is very time-consuming for us as growers, it gives our customers a huge advantage because the rocket can be easily removed from the tray in one go, allowing all the ends to be trimmed with just one cut if necessary. If the organic rocket is laid out in a disorderly manner in the tray, it takes much more time, as each leaf would have to be trimmed individually.

To prepare the rocket, remove it from its tray, clean it, cut off the ends if necessary, then wash it in cold water and spin it thoroughly dry. When cleaning, make sure you search the rocket for any weeds and remove them.

Rocket is mainly used as a salad ingredient. But its intense aroma means it also tastes wonderful as a topping on pizza or savoury tarts or in a pasta dish. The delicious salad leaves can also be made into a spicy pesto.

When buying, make sure that the leaves have a beautiful dark green colour and that you do not find any muddy or yellow-coloured leaves. Rocket has rather tender leaves, so it should be used as soon as possible after purchase.
