Organic iceberg lettuce

Iceberg lettuce is a member of the Asteraceae family. Its inner leaves are close together and form large, firm, round heads. Iceberg lettuce originated in America, where it was first cultivated over 100 years ago. In order to be able to transport it over long distances, it was cooled with blocks of ice. That’s probably where the name 'iceberg lettuce’ comes from.

 

In 1977, Rudolf Behr managed to grow this great lettuce in Germany. It wasn't easy at first because for a long time it seemed as if the iceberg lettuce didn’t want to develop a head in Germany. Quite by chance, the lettuce was left for a little longer than usual in one test field. To everyone’s great surprise, the lettuce in that field formed beautiful, round heads. The secret ingredient had been found – a little more patience than with the lettuces cultivated previously! In the meantime, iceberg lettuce has made its big breakthrough in Germany and is now a key feature at salad counters nationwide.

 

 It owes its popularity to its crunchy, juicy leaves, as well as to its great shelf life and yield. As the leaves tend to be firmer in consistency, iceberg lettuces keep very well and can even be portioned easily and consumed over several days.

We grow our organic iceberg lettuce at our organic site in Mecklenburg-West Pomerania, where it grows in fields near the Schaalsee Biosphere Reserve. We also grow organic iceberg lettuce at our organic site in Rosenweide (Lower Saxony) and in Büttelborn (southern Hesse).

 

When it’s too cold for outdoor cultivation in Germany, our organic iceberg lettuce grows under the Spanish sun. This allows us to offer our delicious organic iceberg lettuce all year round.

Organic iceberg lettuces are very easy to prepare. It is best to remove the outer leaves first. Then you just take off as many leaves as you need for your dish and wash them whole. As iceberg lettuces are considered “naturally clean” due to the head formation, the leaves do not necessarily need to be washed. You can, for example, simply remove the outer leaves and then use the lettuce without washing. If you want to use the whole lettuce straight away, there is a good trick. Take the iceberg lettuce in both hands. The stalk must point downwards. Then vigorously beat the lettuce with the stalk on the worktop. All of a sudden, the stalk will come out and you can easily wash the leaves.

 

Organic iceberg lettuce is the ideal base for any salad. It doesn’t matter what kind of dressing you choose – oil and vinegar, yoghurt or cocktail dressing – iceberg lettuce tastes good with everything! Iceberg lettuce is also great for filling with falafel or for making a layered salad.

 

If you are not going to prepare the organic iceberg lettuce immediately after purchase, it is advisable to store it in its packaging in the vegetable compartment of the fridge. If you only want to use part of the lettuce straight away, simply wrap the rest in the plastic wrap and store it in the vegetable compartment. Thanks to its firm leaves, the iceberg lettuce can be stored there for a good week.
