Lamb’s lettuce originates in the Mediterranean region and belongs to the Valeriana family. It is also often referred to as corn salad in the US or mâche if you're feeling French.

 

Lamb’s lettuce was already known as a foodstuff more than 3,500 years ago. This is confirmed by evidence of seeds found at Neolithic excavations at Lake Constance.

 

The intense flavour of lamb’s lettuce is unmistakable and unique, which can also be attributed to its relationship to valerian. Lamb’s lettuce has a spicy, nutty flavour and its delicate leaves are an appealing dark green colour.

Our lamb’s lettuce grows in the light Geest soils of the fields in Reinbek just outside Hamburg in Schleswig-Holstein, as well as in our fields in Bornheim (North Rhine-Westphalia) near the Rhine. Here the lamb’s lettuce can grow slowly and develop its tender leaves and nutty flavour.

 

Our lamb's lettuce is grown from seed. The soil is prepared well and the seeds are then sown directly into the field.

When buying lamb’s lettuce, make sure that the leaves have a beautiful dark green colour and that you don’t find any muddy or yellow-coloured leaves. Lamb’s lettuce has very delicate and fine leaves, so it should be prepared as soon as possible after purchase.

 

Lamb’s lettuce needs to be “cleaned’ before preparation, which means cutting off the delicate roots, among other things. You should make sure that the leaves are still held together at the ends. This maintains the volume and prevents the individual leaves from sticking together. The lamb’s lettuce should then be washed thoroughly and spun dry. If you don’t have a salad spinner at home, place the lamb’s lettuce on a clean kitchen towel, hold the ends together and then swing vigorously back and forth.

 

Lamb’s lettuce is mainly used as a salad ingredient. You can either enjoy it on its own or mix it with other salad leaves. It tastes great with both sweet and fruity and creamy dressings. An unusual and very tasty way to use it is to prepare a lamb’s lettuce pesto. And a green smoothie made with lamb’s lettuce also tastes great.
