The colour of the heart leaves is an intense golden yellow and contrasts pleasantly with the dark green outer leaves of the lettuce. The heart is always loosely packed and the taste is sweet with a pronounced nutty note. The tender inner leaves in particular are great for using fresh in salads, but can also be steamed as vegetables. The flavour of the cooked leaf veins is reminiscent of asparagus.

The plants thrive in slightly lighter soil. They grow well in temperate climates, since the romaine lettuce is sensitive to changing external conditions. Only the central heart is harvested, as the outer leaves are very hard and tough.

If stored correctly, the romaine lettuce will stay fresh and retain its vitamins for a few days. Store it in the vegetable compartment in the fridge. To prevent the lettuce from being exposed unprotected to the dry cold, it should be placed in a plastic bag suitable for use with food, which should first be pierced with holes (e.g. using a fork). Romaine lettuce is the main ingredient in a classic salad popular in the US, the Caesar salad.
