Rocket, or arugola, is a cruciferous plant originating from the Mediterranean region. Rocket was a popular plant used for salads and seasonings in Roman times. However, it then fell into oblivion, experiencing a kind of renaissance as Italian cuisine gained in popularity.

 

Rocket – or rucola to give it its Italian name – has since become an indispensable ingredient in every kitchen. 

 

There are different varieties of rocket that are grown. We cultivate the narrow-leaved wild rocket. It has narrow, deeply serrated leaves and a much more intense aroma than conventional rocket.

Our rocket grows just outside Hamburg in wide fields around Reinbek (Schleswig-Holstein) and in our fields in Bornheim (North Rhine-Westphalia) near the Rhine, where it is grown exclusively outdoors.

 

Rocket loves well-drained, sandy soil – so the Geest soils on the outskirts of Hamburg offer the ideal growing conditions for these delicious salad leaves.

 

Our rocket is planted early in the year until mid-April as seedlings and sown exclusively with a sowing machine during the remaining months. Harvesting takes place using a special cutting machine for leafy vegetables in the field. The rocket then passes through an ice-cold plunge pool, before being dried and packaged in sales trays.

To prepare the rocket, remove it from its tray, clean it, cut off the ends if necessary, then wash it in cold water and spin it thoroughly dry. When cleaning, make sure you search the rocket for any weeds and remove them.

 

Rocket is mainly used as a salad ingredient. But its intense aroma means it also tastes wonderful as a topping on pizza or savoury tarts or in a pasta dish. The delicious salad leaves can also be made into a spicy pesto.

 

When buying, make sure that the leaves have a beautiful dark green colour and that you do not find any muddy or yellow-coloured leaves. Rocket has rather tender leaves, so it should be used as soon as possible after purchase.
