Chinese Cabbage Salad with Spicy Curry Dressing
Ingredients for 4 people
400 g Chinese cabbage
1 tsp. mayonnaise
150 g yoghurt
4 pinches of curry powder
1 tsp. sugar
1 tbsp. lemon juice
150 g tinned apricots

For the dressing, mix the mayonnaise, yoghurt, sugar, lemon juice and curry powder together, season with salt and pepper. Wash the cabbage and cut into fine strips. Quarter the apricots and mix into the Chinese cabbage and serve immediately.
