Cream of Parsley Root Soup
Ingredients for 4 people
500g parsley root
1 onion
1 tbsp butter
½ l vegetable stock
50 ml cream
250 ml milk
Salt, pepper

Peel the parsley roots and cut into small pieces. Also peel the onion and dice finely. Melt the butter and sauté the onions and parsley root in it. Add the stock and allow to boil once. Then add the milk and cream and let it simmer until the parsley roots are done. Purée. Season with salt and pepper and serve.
