Leek au Gratin
Ingredients for 4 people
800 g leeks
400 g carrots
2 tbsp oil
200 ml vegetable stock
100 g cream cheese with herbs
Salt, pepper, nutmeg
100g grated Gouda
2 tbsp chopped parsley

Firstly, clean the leeks and cut lengthways, wash and cut into rings. Peel the carrots and cut into thin slices. Braise both in oil for 2 minutes. Add the vegetable stock and cream cheese with herbs, briefly bring to the boil. Season with salt, pepper and nutmeg. Place in a baking dish. Sprinkle the grated Gouda on the top. Bake in a preheated oven at 220 degrees (fan oven 200 degrees) for 10-12 minutes. Sprinkle with parsley and serve.
