Mini-Wok Choi (Pak Choi) au Gratin with Goat's Cheese
Ingredients for 2 people
1 cup of 300g Mini-Wok Choi (pak choi)
4 medium tomatoes
1 small onion
1 clove of garlic
1 tbsp olive oil
Salt, pepper
20 g black olives
1 roll (150 g) fresh goat's cheese
4 slices of bacon

Clean and wash the Mini-Wok Choi (pak choi). Cut the stalks into strips, the leaves into course pieces. Wash and dice the tomatoes. Peel the onion and garlic and dice them. Heat the oil. Sauté the onion, garlic and stems for about 3 minutes in the oil. Stir in the pak choi leaves and tomatoes. Season. Stone the olives if necessary and mix in. Fill the vegetables into 2 small or 1 large oven-safe dish. Cut the cheese into 4 thick round slices, season with pepper. Wrap a slice of bacon around each thick slice. Spread over the vegetables. Cook au gratin under a hot grill or in a preheated oven (electric cooker: 225°C / fan oven: 200°C / gas: level 4) for 5-7 minutes. Serve with a baguette.
