Lamb's Lettuce Pesto
Ingredients for 2 people
150 g lamb's lettuce
4-6 tbsp pine nuts
60 g parmesan
2 cloves of garlic
Olive oil
1 tsp sea salt
perhaps a baguette or brown bread as a base
Purée all the ingredients and add olive oil to the desired consistency.
The quantity fills about 1 jam jar. Served on a baguette or brown bread with cream cheese as a base and 1-2 lamb's lettuce leaves as garnish.
