Veroma salad mix with pears and poppy seed dressing

Ingredients for 4 people
1 Veroma salad mix (3 pieces)
300 g pears
6 tbsp maple syrup
3 tbsp poppy seeds
2 tsp ground cinnamon
½ tsp ground aniseed
2 tbsp olive oil
2 tbsp walnut oil
Juice of ½ orange
Salt and pepper from the mill
4 burrata

Wash the Veroma salad mix, shake dry, chop small, and divide between four plates. Wash the pears, cut them in half, remove the seeds and cut them into wedges.
 

Bring the maple syrup, 3 tbsp poppy seeds and the spices to the boil in a saucepan. Add the pears and cook for about 5 minutes, stirring occasionally. Then use a spoon to remove the pear wedges and leave to cool slightly in a bowl.

Bring the spiced stock to the boil again and let it reduce a little. Allow the stock to cool slightly.


Whip the cooled stock with the two oils, add the orange juice and season with salt and pepper.
 

Arrange the spiced pears and burrata on plates and pour the dressing over the salad.
