Rocket salad with burrata

Ingredients for 2 people
For the salad:
125 g rocket
200 g cherry tomatoes
1 bunch of fresh basil
2 burrata
30 g pine nuts

For the dressing:
2 tbsp olive oil
3 tbsp white balsamic vinegar
2 tbsp basil pesto
Salt and pepper

Clean and wash the rocket and spin dry. Wash the tomatoes and cut them in half. Pick off the basil leaves, wash and shake dry. Dry fry the pine nuts briefly in the pan and set aside.

 

For the dressing, mix all the ingredients together and season with salt and pepper.

 

Arrange the rocket, basil, tomatoes and pine nuts on two deep plates and place the burrata in the middle. Finally, pour the dressing over the top.
