Glazed oven-baked carrots with feta cheese

1 bunch of carrots
½ lemon
A few sprigs of thyme
2 tbsp olive oil
1 tbsp maple syrup
75 g feta cheese
Salt and pepper

First, preheat the oven to 200 °C (conventional oven). Peel the carrots and cut off the green stalks almost to the end. Wash the thyme, shake dry and pluck the leaves. Squeeze the lemon.

 

Place the carrots in an oven dish, mix together the olive oil and honey, pour over and mix well with the carrots.

 

Bake the carrots on the middle shelf for 15 to 20 minutes and then remove from the oven. Crumble the feta cheese on top, sprinkle over the thyme, season with salt and pepper and drizzle with lemon juice.

 

Bake the carrots again for 10 minutes or until they are still firm.
