Colourful salad with mini romaine

Ingredients for 2 people
For the salad:
2 mini romaine lettuces
150 g cherry tomatoes
½ cucumber
1 orange pepper
150 g mozzarella balls
140 g sweetcorn

For the dressing:
3 tbsp olive oil
3 tbsp balsamic vinegar
1 tbsp agave syrup
1 tsp mustard
Salt and pepper
½ bunch basil

Divide the mini romaine lettuce into individual leaves, wash and cut into strips. Wash the tomatoes and cut them in half. Wash the cucumber and peppers and cut into small pieces. Drain the mozzarella balls and sweetcorn.

 

To make the dressing, pluck, wash and finely chop the basil leaves. Mix the olive oil, balsamic vinegar, agave syrup and mustard well, stir in the basil and season with salt and pepper.

 

Put all ingredients in a large bowl and mix with the dressing.
