Broccoli salad

Ingredients for 2 people
For the salad:
1 broccoli (approx. 500 g)
1 apple
30 g sunflower seeds
50 g cranberries
½ red onion
½ bunch of parsley

For the dressing:
2 tbsp sunflower oil
2 tbsp apple cider vinegar
1 tbsp mustard
1 tsp agave syrup
Salt and pepper

Divide the broccoli into florets and wash, chop the apple and onion into small cubes. Roughly chop the parsley and fry the sunflower seeds briefly in a pan.

 

Now blanch the broccoli. Boil the broccoli for about 5 minutes and then put it straight into ice-cold water.

 

For the dressing, mix all the ingredients together and season with salt and pepper. Mix the broccoli, apple, onion and cranberries in a bowl and top with the dressing and roasted sunflower seeds.
