Chinese leaves is a fast-growing variety of cabbage with a loose head. The leaves are crinkly, the ribs narrow or wide depending on the variety. The leaves can be yellowish to dark green in colour and the head pointed or oval.
Chinese leaves require a moderately rich soil, but getting the balance between cultivation and climate is more important. The plants must be sown at wide intervals to ensure a long-lasting harvest. Chinese leaves can be eaten raw or cooked and both the green leaves and the thick white ribs can be used. This tender vegetable dislikes high temperatures. After bringing the leaves to the boil, let them simmer at medium temperature for 10 to 15 minutes until cooked as you prefer.
